5-Ingredient No-Bake Pumpkin Protein Brownies
Prep Time: 10 minutes · Chill Time: Approximately 1 hour · Servings: 6 brownies
Fudgy, chocolatey, flourless, and packed with protein and prebiotic fiber!
Who said brownies can’t be part of your wellness routine?
These no-bake pumpkin protein brownies are everything you want in a chocolate treat: rich, fudgy, satisfying, and ridiculously easy to make.
Made with just five ingredients, including Goddess Prebiotic, they’re a delicious way to enjoy a chocolate treat while adding protein and fiber to your day.
No flour. No eggs. No oven. Just mix, freeze, and enjoy!
Ingredients
- ⅓ cup natural peanut butter
- ⅓ cup dark chocolate chips (or your favorite chocolate chips)
- ⅓ cup organic pumpkin purée (not pumpkin pie filling)
- 1½ scoops Goddess Prebiotic
- 2 scoops chocolate protein powder (20g protein total, based on the powder I used)
- Optional: Flaky sea salt for topping
Instructions
Step 1 — Warm the peanut butter
If your peanut butter is thick, microwave it briefly until softened and easy to stir. If it’s already smooth and runny, you can skip this step.
Step 2 — Melt the chocolate
Place the chocolate chips in a microwave-safe bowl and heat in 30-second increments, stirring between each interval until completely melted. Be careful not to overheat.
Step 3 — Mix everything together
In a mixing bowl, combine the peanut butter, melted chocolate, pumpkin purée, Goddess Prebiotic, and protein powder. Stir with a spatula until everything is well incorporated into a thick, fudgy mixture.
Step 4 — Prepare your pan
Line a small brownie pan or rectangular glass container with parchment paper. This makes removing the brownies easy and cleanup practically effortless!
Step 5 — Spread and smooth
Transfer the mixture into your lined container and press it down evenly with your spatula.
Step 6 — Add the finishing touch
Sprinkle with flaky sea salt if desired. I personally love the sweet-and-salty combination!
Step 7 — Freeze
Place in the freezer for approximately 1 hour, until firm. Alternatively, refrigerate for several hours until set.
Step 8 — Slice and enjoy!
Remove from the freezer, let sit at room temperature for 2–3 minutes if needed, and slice into 6 beautiful brownies.
My Tips
- Choose your favorite chocolate: I love dark chocolate for its rich flavor, but you can use whichever chocolate you prefer.
- Chocolate protein powder works best: You can experiment with other flavors, but chocolate enhances that classic brownie taste.
- Adjust the texture: Prefer a firmer, fudge-like brownie? Enjoy it straight from the refrigerator or after a short rest out of the freezer. Want a softer texture? Let it sit a little longer before eating.
- Easy cleanup: Parchment paper is your best friend! You can use a brownie pan or a rectangular glass container without worrying about a messy cleanup.
Storage
Store in an airtight container in the refrigerator for approximately 4–5 days, or freeze for longer storage. Allow frozen brownies to soften slightly before enjoying.
Why I Love Adding Goddess Prebiotic
I love finding simple ways to incorporate prebiotic fiber into foods I already enjoy.
Goddess Prebiotic is made with a single ingredient, blue agave prebiotic fiber. It’s flavorless and easy to mix into everyday recipes without changing their chocolatey flavor.
These brownies are proof that taking care of your gut and enjoying something delicious can go hand in hand.
A little chocolate, a little pumpkin, protein, and prebiotic fiber. What’s not to love?
Note: Protein and fiber content per brownie will vary depending on the protein powder, chocolate, peanut butter, and Goddess Prebiotic serving used.
