One of my favorite snacks or side dishes

Eggplant chips, so simple and easy to make.


♦️Ingredients

1 large eggplant

Marinade ingredients:

1 Large lemon zest ( Lemon zest )

5  Tbs olive oil Avocado oil

1tsp Cajun spice or Chili flex

Sprinkle of salt

♦️instructions

  • preheat oven to 450F
  1. Slice eggplant into 1/2inch circles
  2. Mix all the marinade ingredients in a small mixing bowl and mix well
  3. With a silicon brush gently brush the eggplant ( both sided )
  4. Place eggplant on a parchment paper and bake them in preheated oven 450f  for 15 min and twist to the other side for 10 more minutes Or until golden brown, be careful they are addictive 👌🏻

Dip is our delicious raw tahini or make a tahini dip

Tahini dip recipe:

1/2 cup Zathar tahini (or any flavor)

1 lemon juice

1/4 cup cold water

Salt & pepper to taste

( recommend white pepper )


Mix all ingredients in mixing bowl and adjust consistency if need by adding lemon or water.
