Israeli chopped salad
I grew up eating Israeli chopped salad—it’s a staple in my kitchen and one of my favorite things to make every single day. It’s simple, fresh, and absolutely delicious. My kids love it even more than I do!
Ingredients:

3 bell peppers (one of each color)

4 cucumbers
-
3 tomatoes
-
Green onion (or regular onion, but green is my favorite!)

1 bunch of parsley, cilantro, or both (dill is amazing too!)

3 teaspoons olive oil

Juice of 1 lemon

Salt & pepper to taste

Tahini drizzle—A MUST! (Any flavor will be delicious!)
Instructions:

Chop all the veggies into small, even pieces and combine them in a large mixing bowl.

Dress it up by adding olive oil, lemon juice, salt, and pepper. Mix well.

Finish with tahini drizzle—it’s the best part!

Enjoy immediately while everything is crisp and fresh.
Tips for the Best Chopped Salad:
✅ Use green tomatoes if you can—they add an incredible flavor twist!
✅ Go for green onions instead of regular ones. Slice them down the middle (like I show in the video) to bring out their full flavor—so good!
✅ Dress the salad right before eating. If the veggies sit in the dressing too long, they’ll get soggy. You want it crispy and fresh!
✅ Tahini drizzle on top is a must! The most delicious combination ever.
